Kitchari is the gateway meal to the Ayurvedic way of eating. It is a nutritious and delicious dish used often for at-home detox or deep Panchakarma purification programs. However this dish can be made any day when you feel like having something light and cleansing. Whenever your body asks for refreshment, turn to kitchari. It is light and easy to digest when well cooked. Kitchari nourishes and revitalizes all the tissues of the body. Food is one of the essential sources of Prana (Energy). Depending on what type of food we consume, it can either lower your prana or increase your prana. Kitchari is an excellent way to recalibrate your digestion and feel fresh.
In this Kit
- Organic Kitchari Rice and Lentil Mix - 3 Lbs (white basmati rice and split yellow moong dal)
- Kitchari Spice Mix ( Cumin*, Turmeric*, Coriander*, Fennel*, Mustard Seed*, Dried Fenugreek Leaf*, Ginger*, Asafoetida*. *all organic ingredients)
How to make Kitchari (makes 2 servings):
Ingredients
- 1 cup rice & lentil mix
- 1.5 - 3 tbsp kitchari spice mix as preferred spice level
- 4 cups of water
- 1-2 tbsp ghee or coconut oil
- Optional: fresh cilantro and lemon
Preparation
Optional: Soak Rice & Lentil Mix in water for 2 hours.
Rinse mung beans and rice thoroughly in cold water.
Heat the ghee in a deep cooking pot and add Kitchari Spice Mix. Wait till it sizzles and becomes fragrant, do not burn. If desired, add 1-3 chopped vegetables.
Add rinsed Rice and Lentil Mix. Add water and bring to a boil. Bring to low to medium heat, cover and stir periodically.
Cook for 35-45 mins until fully cooked.
Add hot water as needed to obtain a stew-like consistency.
Serve with lemon juice, ghee and cilantro.
